Instructions
  1. Cut an X on the bottom of each peach. Blanch them in boiling water for 30 seconds. Cool them in ice water, then peel them and chop them up.
  2. Saute the onion in the butter in a medium sauce pan for 8-10 minutes, until the onion is softened.
  3. Add the remaining ingredients to the sauce pan. Simmer uncovered until the peaches are very soft (about 30 minutes).
  4. Puree the sauce in a blender.
