Sweet Potato Hash

Ingredients

large sweet potatoes, peeled, diced, and steamed
olive oil
1/4
lb
bacon, cut into ½-inch pieces and rendered until crisp
1/4
red onion, diced
1/2
red bell pepper, diced
1/2
yellow bell pepper, diced
2
ears steamed corn, kernels cut from cob
2
tbsp
minced cilantro
salt and pepper to taste
Instructions
In a skillet, fry the sweet potatoes in the olive oil until crisp. Remove and drain on paper towels. Combine all the ingredients in a bowl, mix well, and place in a warm oven until serving time.
