Ingredients

fresh pineapple chunks

cucumber
peeled, seeded, and chopped

each
green onions
chopped

tsp
scotch bonnet
finely chopped
1
cup
mango
chopped
1
each
yellow bell pepper
stemmed, seeded and finely chopped
1
cup
unsweetened pineapple juice
1/4
cup
fresh lime juice
2
tbsp
cilantro leaves
finely chopped
1
tsp
sugar
salt to taste
Instructions
Place the pineapple, cucumbers, green onion, Scotch bonnet, mango, and bell pepper in a blender or food processor and puree until smooth. Transfer to a bowl and add the remaining ingredients and salt to taste and stir well.
Cover and refrigerate for an hour before serving.
