Y’all know I loves me the bacon. I cure five or six of flavors of my own of the stuff. Now imagine my glee when I opened the mailbox and found a review copy of The Smoking Bacon & Hog Cookbook. Much like the animal that sacrifices itself for my cured pork fix, I squealed. Only with joy instead stark of terror. That’s an important distinction. What’s more important is the book’s treatment of one of the holiest of holies in the meat world: bacon. This book is as much about curing bacon as it is cooking with it.

This is Dave DeWitt’s recipe for a traditional Mexican sausage that’s often served with huevos rancheros for breakfast. Unlike other sausages, it is not usually stuffed into casings but served crumbled or formed into patties. (There are two varieties of chorizo: this Mexican version that is made with fresh pork, and Spanish chorizo, made with smoked pork.) This recipe requires advance preparation.

He then opened the “Cajun Bayou Seafood” restaurant offering fresh seafood and what many called “the best boiled crawfish around.”

Twisted individual that he is, Dave DeWitt emailed me a link to this story about a 2.5-foot giant isopod that was reeled in while trying to violate an underwater robot. I’m sure he was trying to shock me but the joke’s on him. I’ve played a lot of Dungeons & Dragons. My 20th level paladin slays demons like this for breakfast.
Speaking of, it turns out these Cthulhu-looking sea creatures are related to lobsters and shrimp to the point where you can eat them.
