I’ll be on the road to four locations in Texas in August to perform cooking demonstrations for one of two of my latest books, Dishing Up New Mexico, at four Central Market Cooking School locations. I’ll be in Dallas (August 11), Ft. Worth (August 12), Austin (August 13), and Houston (August 14). Hog Heaven, located adjacent to Centennial Park in downtown Nashville, is literally a hole in the wall BBQ joint. While there are a few “outdoor” tables most of the business is takeout with folks enjoying the hickory-smoked meats in the park. What makes Hog Heaven unique is they make a white barbecue sauce that is absolutely fantastic for poultry.
Burn! Tested: The Tappecue Wi-Fi Thermometer
Need a great Christmas gift for that special outdoor cook on your Christmas list? Although a bit pricy (but in the same price range as similar units), take a look at the Tappecue, a four-probe Wi-Fi enabled remote thermometer that is compatible with iPhones, iPads, iPods and Android devices. It does not work with a Windows phone. With the built-in Wi-Fi interface, you can even allow your friends to monitor how your cook is going. The probe temperature range is 50 to 500 degrees F. and the probes have six-foot cables that make them very adaptable to most smokers and cookers. (You can even use the Tappecue to monitor oven temperatures if you’re cooking indoors).
The Way of the Bun: A Quickie on Grilling Etiquette
Last weekend, a good buddy of mine took it upon himself to open the lid on my grill and check the food. Right after I’d just checked it myself. My friend’s lucky he’s stringy or he’d have been the next course. I’m not a cannibal. I am, however, a firm believer in object lessons. Especially to any would-be violators of my grill second guessing my work. I have plenty of friends so I can afford to cook one here and there.
