Candied yams being a regular cast member of holiday dinner, I like to play around with them each year. Not like some creepy herbophile, just so we’re clear. I like to change them up when I cook ’em. We did Thanksgiving in a Southwestern theme so I had to find a way to make them fit. The solution: Kahlua, baker’s chocolate, and ground red pepper to set off all of that sweetness. And, coincidentally, keep the little kids from eating them all before the grown up kids had a chance to grab a bite.
Thanksgiving Recipes for Two, Part 2: Duck Breasts, Stuffing, and Veggies
Thanksgiving is fast approaching but you’re not a big fan of turkey so you need an alternative to the traditional cholesterol laden feast. Forget the turkey, the gravy, lumpy mashed potatoes and green bean casserole with cream of mushroom soup. Instead enjoy pan-seared duck breasts with a Cajun mustard sauce. Serve with apple-cornbread “stuffing,” and sautéed green beans and peppers.
Thanksgiving for Two Part 1: Turkey with Chipotle Gravy
Downsize the Thanksgiving feast. You don’t need a 24-pound bird for two people. A stuffed turkey breast works just fine. Especially when served with sautéed sugar snap peas, roasted potatoes, chipotle gravy and cranberry-horseradish relish. This is the first in my recipe trilogy for a great scaled-down turkey day. Spicy Fish & Chips
For this spin on traditional fish and chips I added a bit of cayenne and chipotle to give the fish and chips a layer of sweet heat. The fried fish would also make great fish tacos.
San Diego Burger Battle Part 2: Training Up
Scouting was over. I knew the conditions of the San Diego Burger Battle. Time to roll up the sleeves, plan, and execute. We would have two hours to create our burgers and turn in two presentation boxes–one for appearance judging, one with enough burgers to feed the four judges. You could provide each taster with their own full hamburger or chop one into fourths; sliders were an option too and you’d need one per judge to munch on.
