Not that you ever need to explain to anyone why you want to barbecue, but if for some reason you did, there’s a great list of Barbecue’s High Holy Days in George Hensler’s book, Totally Q. If some fool looks at you when you suggest firing up the grill and you’re tired of telling them, “Because I say so,” try using one of these as an excuse. Just make sure the holiday and the date coincide. Haters can’t call you out if you’re right.

I gave up smoking meat a few years ago because it was getting to be too much trouble. First I had to locate the wood, which meant calling firewood lots and asking if they had any pecan or fruit woods around. And then, during the smoking process, was the constant adding of the wood to the firebox, which interrupted anything else I was trying to do. The best time to smoke was during a football game when I could add wood during the timeouts for commercial breaks. But football isn’t on during the summer, which is the traditional time for smoking. Finally, I gave it up and just went to the Pork and Brew Cookoff and bought a year’s supply of pulled pork and brisket from my friends, the Texas Rib Rangers.

Fighting loose barbecue sauce during a rib bender is eating’s shoveling sand against the tide. You’re eventually going to lose. Much like Star Trek’s Kobyashi Maru test (i.e. no win scenario), it’s a test of character with no shot at victory. Eventually, some of that sweet red yummy is going to fall on your shirt, forcing you to deal with it. That’s why you see so few tuxedos at barbecue competitions.
