Happy Halloween, folks. Before I put on my pimp costume and head over to my friend’s Halloween party, I thought you might want check out one of the things I like to grill this holiday: orange bell pepper Jack-O-Lanterns. You can fill ’em with all kinds of stuff but I use spiced up cream cheese (a) because it looks good in the pepper’s face and (b) practically melts into a hot dip you can use for chips and the sliced pepper after its grilled. It’s a very simple appetizer that my grilling crew loves.
Slow-Cooked Pork with Chipotle Pumpkin Salsa
As part of the Burn! Blog’s ongoing pumpkin-related coverage, I decided to fool around with a jar of Chipotle Pumpkin Salsa with Roasted Tomatillo, produced by Chef Rick Bayless’ Frontera Foods company. Throw it into a slow cooker with a pork tenderloin, and a few hours later you have a great autumn meal.
My Habanero Chorizo Pizza Experiment
Two weeks ago, my niece Jordan ordered me to grind up a batch of my habanero chorizo for the family’s Saturday grill night. What she did not dictate was how I cooked it for the group. Some of you may remember how much I love playing with grilling pizza. I combined the two dishes in this simple little twist on pizza and quesadillas. The only person who ended up hating it was me because it was all gone before I had a chance to fill up on the stuff.
